Store-bought tortellini with pesto, tomato sauce, or sage butter with added veggies like spinach, mushroom, or asparagus.
Baguette bread with mayo, cheese, lettuce, tomato, and sub dressing (store-bought or homemade – olive oil, red wine vinegar, and oregano). You can add fake lunch meat if you’d like as well!
Boxed mac and cheese! Add peas or broccoli to dress it up, and fake meat hotdogs if you really want to go wild.
Buy a pizza kit, add cheese, and your favorite veggie toppings like mushrooms, olives, green pepper, tomatoes, onion, feta cheese, or spinach!
Make a bowl of store-bought soup and have a simple side salad and some bread for an easy meal!
Heat up a fake meat burger, slap it on a bun, and serve with some frozen fries (heated of course).
Cook up some frozen wok veggies and add to ramen noodles. Add fried egg or teriyaki sauce for extra goodness.
Cook some frozen falafel and add to pita bread with cucumbers, tomatoes, and store-bought tzatziki.
Put tortilla chips on a sheet pan with shredded cheese and add your favorite Mexican toppings like black beans, tomatoes, guacamole, and jalepenos.
Cook up boxed flavored OR plain rice with veggie broth, dump in a can of diced tomatoes, add some seasoning (cajun or taco). Throw in your beans of choice.
Add hummus to a tortilla and your favorite veggies or toppings (like beans or cheese). Cucumber, spinach, and peppers are solid choices.

Get together all of your favorite veg snacks from the fridge and put them on a platter to make a fancy tapas meal. Veggies, dip, hummus, nuts, cheese and crackers, olives, and pickles make great tapas!
Use a store-bought jar of tikka masala sauce and add it to cooked rice with tofu, chickpeas, and/or cauliflower. You can use frozen cauliflower rice or a bag of frozen veggies, too!
Use fake meat crumbles and taco seasoning to make quick taco “meat” which you can add to soft or hard-shell tortillas and your favorite taco toppings like lettuce, shredded cheese, tomatoes, onion, black olives, salsa, and sour cream.
It doesn’t get much easier than boiling some pasta and topping with a jar of tomato sauce! Add some parmesan cheese and some broccoli to dress it up.
Use whole wheat or sourdough bread and toast it up. Top with mashed avocado, salt, and pepper. Dress it up even more with a slice of tomato, fried egg, or everything bagel seasoning.
Cut up some mushrooms, multi-colored bell peppers, zucchini, and red onion and add them to skewers. Drizzle with olive oil and add seasoning, then toss on the grill for a few minutes until everything is cooked through. You can also add haloumi to make it really snazzy.
